Liquid honey with very slow crystallization. It is amber colored, reddish with touches of agate, dark. The aroma is plant-like, strong, penetrating, tangy and aromatic. It has a bitter-sweet aftertaste, astringent on the tongue, tannin-rich. It is harvested in the chestnut woods of the Italian Alps and Apennines during the end of Summer.
Mielizia honeys are not pasteurized: they are produced at a temperature never higher than 40° C, the temperature of the hive, to maintain intact flavour and nutrients.
